Discover a refreshing Antioxidant Chopped Salad Recipe packed with vibrant veggies, rich flavors, and health-boosting nutrients.

Ingredients:

Salad base:

  • 4 cups mixed greens

Toppings:

  • 1/4 cup aged white cheddar (shredded).
  • 1/4 cup cooked farro.
  • 1/4 cup chopped Medjool dates.
  • 1/4 cup diced jicama.
  • 1/4 cup diced organic apple.
  • 2 tbsp dried cranberries
  • 2 tbsp chopped Marcona almonds

Dressing:

  • Champagne vinaigrette

Preparation:

  1. Toss all the ingredients together in a large bowl.
  2. Drizzle with the champagne vinaigrette and mix well.
  3. Optionally, top with grilled salmon for added protein.

Health Benefits:

This vibrant salad is rich in antioxidants, fiber, and vitamins that promote heart health, support digestion, and provide sustained energy levels. The combination of farro, Medjool dates, and apples offers slow-digesting carbohydrates that stabilize blood sugar—essential for thyroid function. Grilled salmon, if added, is an excellent source of omega-3 fatty acids and selenium, both crucial for supporting the thyroid gland. Additionally, the mixed greens and almonds provide essential minerals like magnesium and vitamin E, which contribute to balanced hormone production and overall metabolic health.
