

Mango Chicken Bowl: A Meal to Share with Love

This Mango Chicken Bowl is one of those meals that feels just as good as it tastes—vibrant, wholesome, and full of flavors that awaken the senses. Tender grilled chicken (or tofu), caramelized Brussels sprouts, crisp kale, and herb-infused red rice come together in a perfect balance of nourishment and comfort. And the Thai honey mango sauce? A sweet, tangy, and slightly spicy touch that makes every bite special.

Ingredients:
- 1 lb (450g) all-natural chicken breast (Plantbased alternative: Tofu)
- 2 cups Brussels sprouts, halved
- 1 cup purple kale, chopped
- 1 cup carrot, shredded
- 1 cup herb red rice (cook ½ cup dry red rice as per package instructions with a mix of herbs like thyme, parsley, and dill)
- 2 tbsp olive oil
- Salt and pepper to taste
Thai Honey Mango Sauce:
- 1 ripe mango, peeled and chopped
- 2 tbsp honey (Plantbased alternative: agave syrup)
- 1 tbsp soy sauce
- 1 tbsp lime juice
- 1 tsp grated ginger
- 1 garlic clove, minced
- 1 tsp chili flakes (optional for a spicy kick)
Instructions:
- Prepare the Sauce:
- Blend the mango, honey, soy sauce, lime juice, ginger, garlic, and chili flakes (if using) until smooth. Set aside.
- Cook the Chicken:
- Preheat grill or skillet to medium-high heat.
- Season the chicken breasts with salt and pepper.
- Grill or cook the chicken in a skillet with a tablespoon of olive oil for about 6-8 minutes per side, until fully cooked. Brush with a little mango sauce in the last minute of cooking. Once done, let it rest before slicing.
- Roast the Brussels Sprouts:
- Preheat your oven to 400°F (200°C).
- Toss the halved Brussels sprouts with 1 tablespoon of olive oil, salt, and pepper.
- Spread them on a baking sheet and roast for 20-25 minutes, until tender and caramelized.
- Prepare the Salad:
- In a large bowl, toss the chopped purple kale and shredded carrot together.
- Assemble the Bowl:
- Divide the herb red rice between bowls.
- Top with the kale and carrot salad, roasted Brussels sprouts, and sliced chicken breast.
- Drizzle with the Thai honey mango sauce.
