Spiced Almond Cookies for Balanced Blood Sugar
There’s something magical about the aroma of freshly baked cookies wafting through the house during the holiday season. These Holiday-Spiced Almond Cookies not only capture that cozy warmth with notes of ginger and cinnamon but also come with a healthy twist. Packed with ingredients like almond flour to stabilize blood sugar and ginger to support digestion, they’re a treat you can feel good about. Perfect for sharing—or savoring solo with a hot cup of tea—they bring both flavor and nourishment to your festive season.
Ingredients:
- 1 ½ cups almond flour
- ¼ cup coconut sugar or maple syrup
- 1 tsp ground ginger
- 1 tsp ground cinnamon
- ½ tsp baking soda
- ¼ tsp salt
- 1 egg (or flax egg for a vegan version)
- 2 tbsp coconut oil, melted
- 1 tsp vanilla extract
Optional Topping:
- A sprinkle of coconut sugar mixed with a pinch of cinnamon
Instructions:
- Preheat the oven: Set it to 350°F (175°C). Line a baking sheet with parchment paper.
- Mix the dough: In a medium bowl, whisk together almond flour, coconut sugar, ginger, cinnamon, baking soda, and salt. In a separate bowl, combine the egg, melted coconut oil, and vanilla extract. Gradually mix the wet ingredients into the dry ingredients until a dough forms.
- Shape the cookies: Scoop about a tablespoon of dough, roll it into a ball, and flatten slightly on the baking sheet. Repeat with the remaining dough, spacing cookies about 2 inches apart. Sprinkle with the optional topping if desired.
- Bake: Bake for 10-12 minutes or until the edges are golden. Let them cool completely before enjoying—though I understand if you sneak one while they’re warm!
These cookies are great for holiday gifting or as a sweet addition to your festive table. Enjoy every bite of the season’s warmth!
Health Benefits:
- Almond Flour: High in healthy fats and magnesium, which help stabilize blood sugar levels—a key factor in maintaining hormonal balance.
- Ginger: Known for its anti-inflammatory properties, ginger supports digestion and reduces inflammation, both important for hormonal health and cancer prevention.
- Cinnamon: This warming spice helps regulate blood sugar and improves insulin sensitivity, essential for balanced hormones.
- Coconut Oil: Provides medium-chain fatty acids, which are easily metabolized and support thyroid health.
Enjoy these cookies knowing they’re as nurturing as they are delicious!
